[UbuntuGnome] High resolution screen (2560x1440) graphics issues

Hello everyone !!

I've recently bought a Lenovo Thinkpad X1 Carbon 4-th gen which has a screen resolution of 2560x1440 and as GPU the Intel HD Graphics 520 (Skylake GT2). I installed on it Ubuntu Gnome 16.04 .
With some softwares like Firefox and Libreoffice I've no problems with the graphics as you can check below.

But on some others I've installed (like TeXmaker, Matlab, Mathematica), the icons are really small and this makes these softwares a bit uncomfortable to use (as you can see below for Matlab).

Does anyone have any suggest for solving this ?
