Well, you'd install and put the / on a partition on the SSD, /home of the HDD. You'd choose 'Something Else' at the paritioning section of the install to do this.
As for three, the inteal drive partitions will appear in the file manager but won't mount until you click them.
You can move your /home folder in / to its own /home partition, but as you've recently installed it is easier to simply reinstall correctly rather than incorrectly then try and patch it up post-install. (And probably a lot less frustrating and time consuming, but if you're up for a leaing curve ...).
You can also just put folders like Documents, Music, Videos, etc., on the hard drive you wanted to use as /home, delete the corresponding folders in the /home folder and replace them with symlinks to the folders on the HDD, if you follow me. This is the way I would be going. Means if you install a second OS very easy to symlink that to the same data as that being used by this install. Avoids redundancy.
