Ubuntu OS family: how to create program shortcut from command line

Hi,
I'm looking for a software in order to remotely control a set of machines with different OS linux, windows, mac os x. The solution is to install a server in all the controlled machines and a viewer in the controller machine. Correct me if I'm wrong. For what I know the best is the VNC
family and the RFB protocol. I'm interested about Multiple sessions, encryption, prompt local user coection, NAT pass trough, while I do not mind about file transfer and audio support.
I prefer to use open source solutions.

TurboVNC → fork of TightVNC oriented 3D graphic. Only client
TightVNC → old still supported, but not frequently updated
TigerVNC → fork of TightVNC focus performance and on remote display functionality, uses TurboVNC library. Client/Server
UltraVNC → uses TurboVNC library. Client/Server
Open Virtual Desktop
RemoteVNC → fort of TightVNC with automatic traversal of NAT and firewalls

Mac
RealVNC

TigerVNC

I prefer to avoid commercial solutions as:
RealVNC → control manager
Nomachine
Teamviewer

What is the best server? UltraVNC or TigerVNC?
Maybe the best pair is TurboVNC viewer/UltraVNC server or TurboVNC viewer/TigerVNC server or TigerVNC viewer/TigerVNC server.
Any suggestions?
